I wasn't really sure how to pick what to blog about, or maybe in what order is more specific. I have tons and tons fo recipes that I have been meaning to try, stored in various places. For example, folders that are too full, they no longer close properly and boxes that are stuffed with cut-outs from magazines and such. Next time I am literally going to close my eyes and just pick one.
For now, I have a Flickr page and I used to post things on Cake Central. This post is about the 1 of 3 things I get asked about the most. " How did you make those rainbow cupcakes?" Well, let me show you.....
Above are the ingredients for a cake mix, using the WASC (white almond sour cream)recipe I found on CC. I admit, I was never a fan of cake mixes, but the additions listed in the WASC recipe make it an acceptable alternative, expecially if you want to bake a cake just to decorate. For the record, they're also very moist.
I always sift the dry ingredients. When they're all sifted and the last little pieces won't go through, I throw them away.
A few pics didn't make it to this point, but it was just the mixed batter in cups before I colored it. Once the batter is mixed, divide it equally into as many colors as you want your rainbow cuppie ( or cake) to be. I went old school and used ROY G BIV, well minus the I .
Add each color, about a tablespoon at a time, if possible let it stand for a few minutes in between the next color.

I added a little too much batter for my taste. If you look at the 2 in the middle, that's my idea of a perfect cuppie! The rest are a little too top heavy. Too much mush in their sroom, in my opinion.
Et voila! A beautiful cross section of a very colorful cuppie!
WASC

1 cup AP flour
1 cup granulated sugar
1 cup water ( which I forgot to add in the picture)
1 cup sour cream
1 Tablespoon flavoring ( I used 1/2 almond & 1/2 vanilla)
3 eggs
Preheat the oven to 350. Add all the ingredients and mix until combined. Turn the mixer to med speed and beat for another 1 minute. These baked for 17 minutes. Very simple, very worth it.
