easy peasy mint chip cookies.

If you want a super duper easy recipe that results in a yummy, tastey, can't-stop-at-just-one cookie......well then, keep reading.


These glasses are very special. They are part of a set that belonged to someone that cherished them. Her fondest memory was drinking root beer floats with her grandfather. I'm very lucky to have 2 of these knowing how special they are to her. Thanks K!
This is what you'll need for the cookies. No kidding, thats it. Arent you in love with the one bowl recipes as much as I am? Note: that little bottle of green food color is now in the garbage. It is the most vial, ugly, obnoxious color I have ever seen. Before you scroll down to the next pic, let me say this: I envisioned a beautiful, LIGHT, mint chocolate chip ( like from Baskin Robbins), kind of sea foam color for the cookies. Like just a hint of color.
This crapola is what I ended up with:

To me, its just awful. It totally remind me of Oscar the Grouch. If thats what I was going for, then fabulous. Since it wasnt what I was going for....not cool. I added the liquid color first in the above pic, but it was like neon nastiness. So I tried to fix it and grabbed Americolor Forest green and this is what I ended up with. Whatever. I was going for subtle, I got in your face, is that spinach color. Lets just move on.


I prefer smaller cookies, so I used a smaller scoop. I'd guess they're about 2 tablespoons.


The recipe called for creme de menthe chips as well as semi sweet chocolate chunks. It also called for mint extract. I didnt use any of these. I planned on using these amazing Nestle chips I found; dark chocolate and mint chips together in the same bag. Sounds fab, right? Well, after I added the extract, it just tasted so minty to begin with ( I sub'd Lorann creme de menthe extract for the mint extract) so I didnt want to add mint chips. I just threw in some semi sweet chips.

Heres the recipe:


1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, softened
1/4 to 1/2 teaspoon mint extract ( I used Lorann creme de menthe, about 1 dram or 1 teaspoon)
6 to 8 drops green food color
1 egg
1 cup creme de menthe baking chips ( i omitted these)
1 cup semisweet chocolate chunks ( I used chips and 1 cup was more then enough)


1.Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms.
Stir in creme de menthe baking chips and chocolate chunks.
2.Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
3.Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack.
Serve warm or cool completely. Store tightly covered at room temperature.

I also wanted to add that I have CakeBoss software. Ive actually had it for an embarrassingly long time not to have used it until now. Im going to try to make time to figure it out too.

This recipe costs $5.51 and yields 4 dozen cookies. If I entered the information correctly on my cell phone calculator, that would be approx 11cents per cookie, or $1.30 per dozen.

I'll try and add my recipes to my CakeBoss software as I go and I'll add the results to my blog as well!!
